I bottle soups and stews; I like a little bit of fresh ginger root to taste. I do NOT like chomping down on a bit of boiled ginger root and feeling the taste burn a hole though my cheeks or tongue.

So I dice the chunk of root into four or six pieces and knot them in a small mesh bag. The flavour seeps out of the back and into the meat and vegetables, and look! I can salvage the ginger root for a second dose of flavour in tomorrows batch of stew,
