Yilgarn Baked Beans

To the best of my knowledge this is the FIRST web-stored recipe for Yilgarn baked beans.

Summertime in Southern cross and the tin-roofed 4-room house was literally an oven; my mother baked meringues by leaving them on the kitchen table for an hour. No oven necessary.

Summer evenings one of us plucked up courage to race inside, grab the kerosene primus stove, two cans of baked beans and a loaf of bread. Supper was baked-beans-on-toast cooked on the primus stove on the front lawn in the shade of a eucalypt tree.

To the best of my knowledge my mother never made baked beans. Her son has fabricated this recipe:

• I cup navy beans. Soak for 24 hours

• 1 can crushed tomatoes. Puree

• 1 teaspoon salt

• 1 teaspoon ground black pepper

• 1 cup molasses

• 1 large onion

• 1.41 pounds of ham steak, with bone.

• Simmer on #2 for 6 hours.
